Cranberry Almond Salad

The cooking class is over, and it was a success. It's the first cooking class I've done in awhile, and it was definetely one of the larger crowds I've had. Definetely preparing me for cooking on Good Things Utah in a few weeks! A lot of great recipes--all simple. A weeknight's worth of meals came in at only $50 for a family of four so it was also a great deal! We also tried a taco meal recipe with TVP--textured vegetable protein. This great meat substitute is made from soy flour and is fat free, and packed with protein and other great vitamins. A little goes a long way. At $3 a bag, it's way more affordable than regular meat. Look for our TVP recipe at the end of this article!

CRANBERRY ALMOND SALAD

This delicious recipe is one that is packed full of good stuff, and has just enough sweetness to it that the kids will love eating it. I presented this one at my cooking class last night and it was well received. Try it out for yourself!!


1 bag spinach lettuce (or one head spinach lettuce, torn into pieces)
1 cup sliced almonds
1/2 cup cranberries (dried or fresh okay)
1 cup shredded reduced fat Swiss cheese
Reduced fat creamy poppy seed dressing (I used Brianna's all natural creamy poppyseed)*

Place lettuce in a bowl or on a salad plate. Sprinkle almonds, cranberries, cheese and dressing on top to taste. If serving as a meal, put chicken slices on top and serve with a whole wheat roll.

*Can use other dressings if desired.
TVP TACO MEAT
 
1/2 cup TVP flakes (found at health food stores)
2 cups water
2 tbsp Bragg's Liquid Aminos (can substitute soy sauce if desired)
1 packet Taco Seasoning
 
In a pan, place 1/2 cup TVP flakes, 2 cups of water and Bragg's Liquid Aminos. Turn heat to low-med and cook until water is mostly absorbed. (About 30 minutes). Stir occasionally. When water is mostly absorbed, add packet of taco seasoning. Stir until well incorporated, and continue to cook an additional 5-10 minutes until rest of water is absorbed. Remove from heat, serve by spooning meat into taco shells or serving over tortilla chips.

The 10 in 10 Challenge: Week 2


Last week, I tackled the issue of food. My eating has been largely under control for the past two weeks. (Minus the trip to The Chocolate a few nights ago). One of my goals is to eat more fruits and vegetables, and I've done a great job introducing some new vegetables to the kids this week. They hated spaghetti squash, but actually loved spinach. They thought it tasted better than head lettuce or romaine lettuce. That's a plus!
My kids love carrots, and I used this dip recipe from Super Healthy Kids. They loved it!

My exercise has been great this week. Up where I live, the weather has been mild, so I've been able to walk the dog while picking up the kids from school, than have them walk home with me. They like to run on the treadmill which is a great workout for them. I've done Billy Blanks Cardio Tae Bo workout this week, ran on the treadmill, ran with the dog outside, and done my Women's Health and Self Magazine workouts. Since I was not feeling well last week, I've tried to tone down the workouts to 30 minutes each. Next week, I'll increase it to 45 minutes to an hour everyday. I love reading everyone's 10 in 10 posts and hope everyone continues to stay motivated!

Lemon Yogurt Muffins

Every Sunday at our house we enjoy a break from the traditional cold cereal or hot oatmeal and stop to enjoy a delicious breakfast together as a family. It's been a tradition since I was a little girl. (Although we usually opted for Dey's doughnuts down the street from my house in California). Yes, my parents were vegetarian and vegan to a point. Sunday mornings included a break to enjoy breakfast at Mother's Market, a slightly rebellious trip to enjoy the Marie Calendar's breakfast buffet, or if they really wanted, it was a trip to Dey's. (You could smell them cooking from our house).

I like to try new recipes, and this one honestly was a throw together. I had a lemon leftover and didn't know what to do with it. My solution? Make lemon yogurt muffins with it of course!



LEMON YOGURT MUFFINS

Muffins:

Ingredients


1/2 cup unsalted butter

2 cups unbleached white flour (I used King Arthur)

1 cup sugar

1/2 teaspoon salt

1 teaspoon baking soda

2 teaspoons baking powder

2 large eggs, beaten

1 cup sour cream (I used fat-free)

1/4 cup lemon juice (I used fresh lemon juice, but storebought would be fine)

1 lemon, juice and zest of

Directions

Preheat oven to 350°.

Grease muffin tins.

Melt the butter and let cool.

Thoroughly mix all the dry ingredients in a large bowl.

Whisk together the eggs and sour cream in a smaller bowl.

Stir in the butter, 1/4 cup lemon juice, and zest and juice of lemon.

Make a well in the middle of the dry ingredients.

Add wet ingredients and mix with as few strokes as possible.

Don't overmix.

Spoon batter into muffin tins.

Bake at 350° for 25 minutes.

Icing:

1 cup lemon yogurt (I used fat free)

1/2-3/4 cup powdered sugar (I used Hain's Organic Powdered Sugar)

Mix together until smooth, pipe over cooled muffins.

Review, "Looking Younger, Living Longer"


Last night I had the opportunity of listening to Mary Roberts Smith, author of "Looking Younger, Living Longer." She largely spoke on the vitamin industry, touching slightly on herbs and their benefits.

She mentioned that only 2% of vitamins are inspected before coming into the US and 6 major vitamin companies import directly from China. She talked about the makeup of many vitamins and the chemicals that make up our vitamin products. She urged that information needs to be more readily available on synthetic vitamins.

She then talked about the benefits of herbs. Cayenne pepper to stop bleeding, garlic as a blood pressure and blood glucose regulator, aloe vera as a pain killer, natural antibiotic and burn relief.

She also touched on the benefits of probiotics and antioxidants.

T. Colin Campbell Review


Friday was a busy day. In the morning I was able to attend a lecture given by T. Colin Campbell, author of "The China Study." The event was sponsored by Activz, and included a speech given by dietician Michelle Bacarella in addition to Dr. Campbell.


Dr. Campbell largely spoke about his China Study findings, however, he made some distinct points during the course of his speech. He made the claim that our body is constantly trying to create health, than followed this statement by asking where nutrition fit into this. His answer? It doesn't. He made the claims that nutrition is largely misunderstood by the general public. He also claimed that research funding in regards to nutrition hardly exists, and doctors are rarely if ever trained in nutrition. He also stated that national policy and standards are corrupted by the food and drug industries.

He made the recommendation that medical schools should focus more on nutrition and train future doctors in this.

He also redefined the word nutrition by stating that nutrition:


1. Involves integrated effects of countless food consitituents
2. Involves infinitely complex mechanisms to produce comprehensive health
3. Nutrition supported by excellence, water, sunshine is greater than the sum of it's parts' it is a biological symphony.

Dr. Campbell also spoke about a 2nd book he was writing that explored the definition of nutrition and where it fit into our society. He and Michelle also took questions publicly at the end of the lecture, and were available after the lecture to meet and greet those in attendance.

Ten in Ten Challenge Update


So, it's been a week since I started the 10 in 10 challenge. (If you have no idea what I'm talking about, click here). For a minute, I'm getting up on my soapbox. When I first joined this, I was so excited. Finally, not a Biggest Loser competition where the goal is to loose the most amount of weight you can as fast as you possible can only to rebound later. Or some crash diet. No, I get to eat!

So how did I do last week? This week has definetely had it's challenges. My eating habits have done great! I ate recipes from Two Peas and Their Pod. I've now officially added this salad to my list of favorites.

However, I've struggled with consistent exercise. But it's also been a good thing. I've really focused hard on healthy eating and haven't felt overwhelmed by the amount of things I need to focus on. It's been good to get back in the habit of healthy eating post holidays, and now I feel like with that under control, I'll be able to focus on making sure that I exercise consistently this coming week.

Next week, I'm trying some new recipes too!

Chocolate, Chocolate, Chocolate!

I'm totally thinking chocolate right now. So I'm ending the week with a recipe for a delicious chocolate fudge cake. It originally came from Kraft, but I did some altering to make it better for you. And surprise, it's still delicious! Incredibly good in fact! And it's one that just gets better as it's fridged because the fudge flavor just gets better! This is definetely one of my splurge desserts.


1 pkg (8 squares) semi sweet baking chocolate


1 pkg Dr. Oetker's or Arrowhead Mills organic chocolate cake mix

1 pkg (4 serving size) fat free sugar free chocolate pudding mix

4 eggs (can sub 4 egg whites)

1 cup fat free sour cream

1/2 cup applesauce

1/2 cup water

1 tub (8 oz) frozen fat free cool whip topping

Raspberries, strawberries, or almond slices to top

Preheat oven to 350 degrees. Grease two 9 inch round baking pans. Chop 2 of the chocolate squares, set aside. Beat cake mix, dry pudding mix, eggs, sour cream, applesauce, and water in large bowl with mixer on low speed just until moistened. Beat on medium speed 2 minutes. Stir in chopped chocolate. Spoon into 2 round prepared pans.

Bake 30-35 minutes or until wooden toothpick inserted in center comes out clean. Remove pans, allow to cool before removing from pan and continuing to cool on wire racks. Cool cakes completely.
Place frozen whipped topping and remaining 6 chocolate squares in microwaveable bowl. Microwave on high 1 1/2 minutes or until chocolate is completely melted and mixtures is smooth, stirring after 1 minute. Let stand 15 minutes to thicken. Place 1 cake layer on serving plate, top with 1/4 of the chocolate mixture and the second cake layer. Spread top and side with remaining chocolate mixture.

Garnish with almonds, raspberries, or strawberries.
